Slow Cooker Creamy Turkey and Sweet Potato Stew

  • 1 lb lean ground turkey
  • 2 large sweet potatoes, peeled and diced (about 3 cups)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 cup carrots, diced
  • 1/2 cup plain Greek yogurt
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 4-5 minutes. Add minced garlic and cook for 1 minute until fragrant. Transfer onion and garlic to the slow cooker.
  2. In the same skillet, add ground turkey and cook until browned and no longer pink, breaking it up into small pieces with a spoon. Drain any excess liquid and add the turkey to the slow cooker.
  3. Add diced sweet potatoes, carrots, smoked paprika, dried thyme, salt, and black pepper to the slow cooker. Pour in the chicken broth and stir gently to combine all ingredients.
  4. Cover the slow cooker and cook on low for 4 hours, or until the sweet potatoes and carrots are tender.
  5. In a small bowl, whisk together Greek yogurt and flour until smooth. Stir the mixture into the slow cooker along with the green beans. Cover and cook on high for an additional 30 minutes to 1 hour until the stew thickens and green beans are tender-crisp.
