No-Bake Chocolate Peanut Butter Banana Bites

  • 2 medium ripe bananas
  • 1/3 cup creamy peanut butter (or almond butter for variation)
  • 1/2 cup dark chocolate chips (70% cocoa or higher)
  • 1 teaspoon coconut oil (optional, for smoothing the chocolate)
  • 1 teaspoon honey or maple syrup (optional, for added sweetness)
  • 1/4 teaspoon sea salt (optional, for flavor contrast)
  • 1 tablespoon chopped peanuts or almonds (optional, for topping)
  • Parchment paper for lining

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. Peel the bananas and slice them into 1/2 inch thick rounds. Arrange half of the slices on the parchment paper.
  3. Spread about 1/2 teaspoon of peanut butter on each banana slice evenly. If the peanut butter is too thick, warm it slightly in the microwave for 15 seconds to soften.
  4. Top each peanut butter layer with another banana slice to form mini banana-peanut butter sandwiches.
  5. In a microwave-safe bowl, combine dark chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring in between, until smooth and completely melted. Stir in honey or maple syrup if you want extra sweetness.
