Maple Roasted Brussels Sprouts with Cranberries & Pecans

  • 1/2 cup pecan halves
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.
  3. Spread the Brussels sprouts cut-side down on the prepared baking sheet in a single layer.
  4. Roast in the preheated oven for 20 minutes, stirring halfway through to promote even browning and caramelization.
  5. While the Brussels sprouts roast, toast the pecans in a dry skillet over medium heat, stirring frequently, until fragrant and lightly browned (about 3-4 minutes). Remove from heat and set aside.
  6. After 20 minutes, remove the Brussels sprouts from the oven and immediately drizzle with maple syrup and apple cider vinegar. Add the dried cranberries and gently toss everything together on the sheet to combine.
