  • 4 cups fresh arugula, washed and dried
  • 2 medium crisp apples (such as Honeycrisp or Fuji), cored and thinly sliced
  • 1/2 cup pecans, roughly chopped
  • 1/2 cup sharp white cheddar cheese, diced or shredded
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup dried cranberries
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1/2 teaspoon fresh lemon juice (to toss apples)

Instructions

  4. In a large salad bowl, combine arugula, sliced apples, red onion, dried cranberries, and cooled toasted pecans.
