Ingredients
- 5 cups mixed salad greens (such as baby spinach, arugula, and romaine)
- 2 medium oranges
- 1 large grapefruit
- 1 ripe avocado
- 1/4 cup toasted sliced almonds
- 1/4 small red onion, thinly sliced
- 1 tablespoon honey
- 2 tablespoons fresh lime juice
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh chopped cilantro (optional)
Instructions
- Peel the oranges and grapefruit, removing as much of the white pith as possible. Segment the citrus by cutting between the membranes to release individual segments. Set aside and gently squeeze any remaining juice from the membranes into a small bowl.
- Peel, pit, and slice the avocado into thin slices or small chunks, keeping them fresh by sprinkling with a little lime juice if desired to prevent browning.
- In a large salad bowl, combine the mixed salad greens and thinly sliced red onion.
- Add the citrus segments and avocado pieces gently on top of the greens.
- In a small bowl, whisk together the honey, fresh lime juice, olive oil, sea salt, black pepper, and any reserved citrus juice until well combined to make the dressing.
- Drizzle the dressing evenly over the salad, then toss gently with salad tongs or two large spoons to coat all ingredients without mashing the avocado.
- Sprinkle the toasted sliced almonds and chopped cilantro (if using) on top as a crunchy and fresh garnish.
