Ingredients
- 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch cubes
- 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
- 1/2 cup BBQ sauce, plus extra for brushing
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 wooden or metal skewers (if wooden, soak in water for 30 minutes)
- 3 cups shredded cabbage mix (green and purple)
- 1 large carrot, peeled and grated
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Add 1/2 cup BBQ sauce to the chicken, mix well, and marinate for at least 15 minutes while prepping other ingredients.
- Prepare the summer slaw by mixing shredded cabbage, grated carrot, and chopped cilantro in a medium bowl.
- In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Pour dressing over slaw mixture and toss well to combine. Refrigerate until serving.
- Thread the marinated chicken and pineapple chunks alternately onto the skewers.
- Preheat the grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.
- Grill the chicken and pineapple skewers for 12–15 minutes, turning occasionally and brushing with extra BBQ sauce during the last 5 minutes, until the chicken is cooked through and slightly charred.
- Remove skewers from the grill and let rest for 5 minutes. Serve the skewers alongside the chilled summer slaw.
