Grilled BBQ Chicken and Pineapple Skewers with Summer Slaw

  • 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch cubes
  • 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1/2 cup BBQ sauce, plus extra for brushing
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • 3 cups shredded cabbage mix (green and purple)
  • 1 large carrot, peeled and grated
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  2. Add 1/2 cup BBQ sauce to the chicken, mix well, and marinate for at least 15 minutes while prepping other ingredients.
  3. Prepare the summer slaw by mixing shredded cabbage, grated carrot, and chopped cilantro in a medium bowl.
  4. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Pour dressing over slaw mixture and toss well to combine. Refrigerate until serving.
  5. Thread the marinated chicken and pineapple chunks alternately onto the skewers.
  6. Preheat the grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.
  7. Grill the chicken and pineapple skewers for 12–15 minutes, turning occasionally and brushing with extra BBQ sauce during the last 5 minutes, until the chicken is cooked through and slightly charred.
