Instructions
- Wash and dry the zucchinis. Cut off the ends and slice into 1/2-inch thick rounds.
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
- Dip each zucchini slice first into the flour, shaking off excess, then dip into the beaten eggs, and finally coat evenly with the Parmesan-panko mixture. Place the coated slices on a plate.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes.
- Spray the air fryer basket with olive oil spray. Arrange zucchini bites in a single layer, making sure they don't overlap. Lightly spray the tops with olive oil spray.
- Air fry for 8-10 minutes, turning halfway through cooking, until golden brown and crispy.
- Carefully remove zucchini bites using tongs and place on a serving dish. Garnish with chopped fresh parsley if desired.
- Serve warm with your favorite dipping sauce such as marinara, ranch, or garlic aioli.
