Ingredients

  • 1 lb lean ground turkey
  • 1 cup finely grated carrot
  • 1/2 cup finely chopped spinach
  • 1/4 cup finely chopped red bell pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, grated carrot, chopped spinach, chopped red bell pepper, mozzarella, Parmesan, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined; avoid overmixing to keep meatballs tender.
  3. Shape the mixture into 16 small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.
  4. Bake the meatballs for 15 minutes or until cooked through and golden on the outside.
  5. Allow meatballs to cool slightly, then thread 3-4 meatballs onto each soaked wooden skewer.
  6. Optional: Place assembled skewers back in the oven for 3-5 minutes to warm through and melt cheese further.
  7. Serve warm with kid-friendly dipping sauces such as marinara, ranch, or tzatziki alongside a simple side salad or steamed veggies.
  8. For picky eaters, you can cut the meatballs off the skewers and serve individually with sides.

Chef tips

  • If you don’t have fresh spinach, use frozen spinach—thaw and squeeze out excess water before mixing.
  • Breadcrumbs can be substituted with crushed plain crackers or oats if preferred.
  • To make this recipe gluten-free, use gluten-free breadcrumbs and ensure sauces are gluten-free too.
  • Keep meatballs small for faster cooking and easier kid-sized bites.

Pros

  • Packed with hidden vegetables blended into the meatballs for added nutrition without fuss.
  • Easy and quick to prepare, perfect for busy weekdays or lunchboxes.
  • Skewers make the meal fun and interactive for kids, encouraging them to eat more veggies.

Cons / watch-outs

  • Requires baking time, which may be a downside if you want an ultra-quick dinner.
  • Some kids might initially be hesitant about meatballs with visible veggie pieces; aromatic seasoning helps.
