- 1 lb lean ground turkey
- 1 cup finely grated carrot
- 1/2 cup finely chopped spinach
- 1/4 cup finely chopped red bell pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground turkey, grated carrot, chopped spinach, chopped red bell pepper, mozzarella, Parmesan, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined; avoid overmixing to keep meatballs tender.
- Shape the mixture into 16 small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.
- Bake the meatballs for 15 minutes or until cooked through and golden on the outside.
- Allow meatballs to cool slightly, then thread 3-4 meatballs onto each soaked wooden skewer.
- Optional: Place assembled skewers back in the oven for 3-5 minutes to warm through and melt cheese further.
- Serve warm with kid-friendly dipping sauces such as marinara, ranch, or tzatziki alongside a simple side salad or steamed veggies.
- For picky eaters, you can cut the meatballs off the skewers and serve individually with sides.
