Instructions

- Meanwhile, warm the mini corn tortillas in a dry skillet over medium heat for about 20 seconds per side or wrap them in a damp paper towel and microwave for 30 seconds to make them pliable.
- In a small bowl, mash the black beans lightly with a fork, leaving some texture intact. Season with a pinch of salt if desired.
- Once the sweet potatoes are done, assemble the mini tacos by spreading a teaspoon of mashed black beans onto each tortilla, topping with a few pieces of roasted sweet potato, and sprinkling with shredded cheese.
- Place the assembled tacos back into the air fryer basket (in batches if needed) and cook for an additional 2 minutes at 400°F to melt the cheese.
