Ingredients

  • 3 medium zucchinis, cut into sticks (about 3-4 inches long)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil spray
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 garlic clove, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare three shallow bowls for a breading station: Put the flour in the first bowl. In the second bowl, whisk the eggs. In the third bowl, mix panko breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper.
  2. Pat the zucchini sticks dry with paper towels to remove excess moisture. Coat each stick first in flour, shaking off excess, then dip into the egg wash, and finally coat evenly with the panko breadcrumb mixture. Press gently to help the coating stick.
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes. Meanwhile, lightly spray the zucchini fries with cooking spray or olive oil spray to promote crispiness.
  4. Place zucchini fries in a single layer in the air fryer basket. Work in batches if needed to avoid overcrowding. Air fry for 10-12 minutes or until golden brown and crispy, flipping halfway through cooking for even crispiness.
  5. While the zucchini fries cook, prepare the garlic parmesan dipping sauce by combining Greek yogurt, mayonnaise, minced garlic, 2 tablespoons Parmesan cheese, lemon juice, salt, and pepper in a small bowl. Stir until smooth.
  6. Once fries are done, remove from the air fryer and let cool for a minute. Serve immediately with the garlic parmesan dip on the side.
